five layered coconut caramel chocolate cake

…and yes, it’s vegan. I took a recipe from a Martha Stewart Living magazine and completely veganized it by doing things such as using coconut milk instead of cream, vegan butter instead of real butter and vegan chocolate. It came out extremely delicious and you couldn’t tell - at all - it was vegan! More than a slice would have been reaaallllly bad. :)

I made this deadly beast for my little brother’s graduation celebration treat. It took a lot of work - and quite a few “Matilda” jokes - to make, but it was worth every satisfied and surprised bite. I am just proving those vegan-haters wrong more and more!

The only thing we needed was some Coconut Bliss ice cream!

Just making a quick post to let you know there probably won’t be many posts for the next few weeks! Going to Redding! I will probably take food photos and post them, though! :)

Just for back from grocery shopping! Didn’t get much since I’m leaving to Redding on Thursday and will be gone for over two weeks! I have never tried fake meat before - but “sausage” and pancakes sounded reaaalllly good.

After running over two miles this morning, I was in the mood for something carbilicious and delicious!
These pancakes are tropical, moist and fluffy! Too many adjectives, but who cares! :)
Whole Wheat Coconut Milk Banana Pancakes
1 cup organic whole wheat flour 
1 tablespoon organic brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
small pinch of salt 
1/4 cup coconut milk from carton (or other non-dairy milk)
1/4 cup mashed banana
Coconut Milk Mixture 
1/3 cup canned coconut milk
2/3 cup coconut milk from carton (or other non-dairy milk)
1 tablespoon apple cider vinegar
Before you start combining ingredients, combine the coconut milk mixture, stir and let sit for 5 minutes. The apple cider vinegar is essential because it will make the mixture curdle - this is a vegan “buttermilk” alternative. 
While the coconut milk mixture is curdling, put the flour, sugar, baking powder, baking soda, salt into a mixing bowl. Combine with a wooden spoon and then mix in the mashed banana, 1/4 cup of coconut milk and the curdled coconut milk mixture. Add less of the coconut milk if you want the batter to be thicker. Mix well. 
Heat up the skillet, oil it and then fry these puppies until golden brown.Yum! 
I used agave nectar for my syrup but feel free to use whatever you’d like. A blueberry compote might make a great addition to these deliciously moist pancakes as well.

Today I made Thai red coconut curry with peas and tofu as well as some steamed jasmine rice. The first photo consists of everything I put in the curry - eyeballed it all - it came out wonderfully!
