That there is a almond butter and banana sandwich on 100% whole wheat bread.
I have been biking sooooo much lately, and have also been eating A LOT of nut butters and breads (whole grain, of course). I don’t feel so bad though, because with all that biking, sweating, and thigh pumping, carbs and protein are much needed! I haven’t been eating to lose weight, but have been eating to satisfy my hunger, and it’s all been in a pretty healthy way. For now, I am not going to worry so much about losing weight but worry more about what I am putting into my body and how much exercise I am getting. I love that riding my bike feels so natural now rather than something I am forcing myself to do to lose weight. I love that I am now educated on the good and bad foods for you, and naturally make the right choices. Because of these things, I know I will never be unhealthy or obese again. I have read, read, and read articles about fast food, high fructose corn syrup, hydrogenated oils, soy, saturated fats, the meat industry (and MORE) and will not touch the stuff anymore. I don’t care if it’s one of those “healthy” or “light” bean burritos from Taco Bell with a whole wheat tortilla— I see it all as CRAP now. Remember, it’s not about how much you eat, but it’s about WHAT you eat. If you’re making bad decisions on a daily basis, chances are you are an unhealthy person. If you are making awesome decisions, though, even without giving much thought to how much you eat on a daily basis, you are most likely just fine. Don’t obsess about how much you are putting in your mouth, calories, and all that bull, but instead worry about the food you are eating! It’s the only way to jump-start a healthful life! For the first time since last summer, I have finally stopped paying attention to calories (I really wish I never started counting). Instead, I have thought more about what I’m eating and how much I am exercising and, let me tell you, I finally feel normal again. I’m not the psycho who is counting almonds anymore (oh yeah, I did that) …
I have found that biking around town is actually extremely fun and, because of it, I am learning the roads pretty well (I have never really driven much— TAKE THE BUS AND RIDE YOUR BIKE PEOPLE). Of course, I have almost been killed quite a few times, but the accomplishment you feel after riding 15 miles is completelyyyyyyyyyyy freaking worth it.
My days have busy, and I am glad considering the fact that I am no longer working. I am taking this time to be with my friends and family and, I have to say, it’s going pretty well. Not only have I been hanging out with friends and family, but I have also developed friendships with many new people. The only thing is, I’m making it even harder for myself to leave this darn town! haha.
I started volunteering at the Shasta Historical Society here in town and I love it. I can spend hours just sitting and looking at old maps, photographs, records, and documents without feeling bored. I love to see how things and people can change throughout the years, and to wonder what will become of the world in the years to come. It’s absolutely fascinating to me.
Anyhoo, I’m sure you’re bored reading this.. I set up a moonlight bike ride event (a bunch of people are going to get together and go riding under the full moon) here in my town and already have 41 RSVPs on facebook! Pretty neat huh? I am super excited. Thinking about making batches of vegan cookies to share…OM NOM NOM.
Going riding with some friends tonight, and will possibly take a yoga class tomorrow if nothing comes up. I feel extraordinary! How about you?

What a deliciously delightful thing this is. I mean, it’s called “The Chocolate Cookbook” AND it’s from the 50s! It includes just about every chocolate recipe you can think of and more including recipes for chocolate potato cake (who knew?), Banana Cocoa Mallow pie (whhaat?), and even Chocolate eggnog! whew!

The other night I was honored the opportunity to do a photo shoot with my good friend Sarah, who is a great photographer. She took these photos of me, and I am extremely happy with them. A year ago, I wouldn’t have felt comfortable doing a photo shoot, because I wasn’t quite comfortable with myself. Even the other night it was odd getting my photo taken in such a fashion because I’m not used to being in any sort of spotlight. Like what??? you want to take photos of ME??



I had a lot of fun, and I feel that these photos represent me wonderfully. I have always loved the Victorian era and all the modesty that went with it.. If only I could dress like that everyday! :)
